How to make crispy papri for chana chaat



Flour 1 cup

Cornflour 1 tsp

Ghee 1 tbsp

Salt 1/4 tsp

Crushed cumin or Ajwain 1/4 tsp

Luke warm water 1/4 cup


Rub flour with ghee and mix salt ,cornflour and cumin….now make a slightly hard dough by adding little Luke warm water …give rest of 15 minutes.

Tips for making crispy papri

Give a rest of only 15 minutes after making the dough…do not give more rest….

Use Luke warm water do not use hot water.

Before frying make some marks on  papri with fingers or prick with fork  to make it crispier.

Fry papri on medium low heat from one side then turn and fry more from other side.

Rol the dough very thin  with rolling pin and cut with round shape cookie make some holes with fingers,see in pic..or prick with fork to avoid puffiness.

Now deep fry papri on medium low heat.

This dough will make 20 small size papri.

When it turns golden brow then take it out from oil..serve with chana chaat and Dahi baray…
