Carrot and peas pilaf 


Carrot and peas pilaf with cucumber ,onion raita,”,,,,,,,,,,

This is an original recipe for an authentic Indian “pulao”. The word “pilaf” is distortion of the word “pulao” which simply means a rice dish cooked with veggies and spices. This tastes great with a spicy raita, or with plain yogurt. Using margarine makes this a vegan. You can replace carrot or peas with your favourite veggies or with the veggies in hand…It is an easy and quick recipe full of nutritions.




1 small onion, chopped

1 teaspoon garlic paste (You can use minced fresh garlic, to your taste)

2 tbsp butter or  ghee or margarine

1 cup basmati rice or 1 cup brown rice

1 teaspoon cumin seed

1 bay leaf

1 -2 cinnamon sticks

6-7 peppercorns

4 -5 cloves

1 cup carrot, fine chopped

1 cup peas

1 teaspoon salt (or to taste)

water (use appropriate water)

Crushed pepper 1/2 tsp

Wash the rice well; drain.

Melt butter/margarine/ghee in a saucepan over low to medium heat.

Saute garlic paste/minced garlic in butter for about 15 seconds, then add the chopped onions and saute until browned, about 5-10 minutes.

Add the rice, cumin seeds, bay leaf, cinnamon stick, peppercorns, and cloves to the onion-garlic mixture and saute for 10-15 minutes or until the rice is evenly browned.this step reduces the chances of stickiness of rice..

Now add carrots, peas, salt, and water, (Add appropriate water,,use the technique that water  level should be half inch above the rice)stir, bring to a boil, cover, reduce heat to low, and cook, without stirring, until the rice is tender, about 15-20 minutes.

Uncover and evaporate excess water if any, remove from flame.

Season with pepper,  and serve hot with raita or with plain yogurt…

Cucumber and onion raita

1   Cucumber cut in thin slices

1 small onion cut in thin slices

Yogurt 1 cup

Salt 1/4 teaspoon

Black pepper powder 1/4 teaspoon

Beat yogurt with hand whisk.mix in salt, pepper,cucumber and onion…serve with veg pilaf…
