Dhuan Dahi Baigan

It is Smoky fried egg plant dish with yogurt..It can also be called Baigan tarka raita but smoke of coal makes it different..

(Fried Eggplant in spiced Yogurt )

2 medium sized eggplants(brinjal)
Oil for frying

250g yogurt

Salt  1/2 tsp

Red chilli powder  1/2 tsp

Roasted cumin powder 1/4 tsp

Chopped green chillies optional

Chopped coriander leaves


For tempering:

2tbsp Oil

1 clove minced garlic

3 Red whole chillies

1 tsp Whole cumin

3-4 curry leaves

Cut the eggplants in medium thin round slices. Deep fry in hot oil until golden crisp. Drain and keep in a plate. Burn a coal and smoke the fried eggplant slices for 5-10minutes. Keep aside.
Add the salt,cumin powder, red chilli in yogurt .
Now pour half the yogurt in a dish. Arrange fried eggplant slices over it and pour the remaining youghrt over the slices.
Heat the oil for tempering and add the ingredients. Fry till aromatic and pour this over the arranged eggplant and yogurt.
Just sprinkle chopped corriander before serving.
