Waheed kay fry kabab copycat recipe
Burns road Walay Waheed k kabab is famous kabab in Karachi.It is a copycat recipe.
Note:For variation You can made this with 1 kg chicken mince..
1kg beef mince 2 times chopped in food processor or (Hath ka Pisa hua qeema)
1tbsp meat tenderizer
Half cup yoghurt
1.5 tbsp ginger garlic paste
2tbsp besan /gram flour or bhunay chanay
2tbsp or 13 whole red chillies
1tbsp red chilli flakes
1/2 tsp haldi ,,,turmeric
2tbsp coriander,,, dhania
1tbsp fresh black pepper
1tbsp whole garam masala,,(check pic 2)
Salt 2 tsp
Half cup butter or oil
One small onion sliced
Coal for smoke
Marinate beef mince meat or qeema with tenderizer, ginger garlic paste and yoghurt for half n hour.
Now in a pan put all dry ingredients and roast dry masala till you get smell of it and it slightly changes the color.Then grind it in coffee grinder.
Note: (If you are using bhunay hoay chanay in place of besan then grind them in coffee grinder.)
Now add this masala and gram flour to qeema. Marinate for another half n hour.
Fry one small onion in ghee or oil once it get golden now add marinated qeema fry a little. Then add one cup of water and mix. Cook on dum with lid tightly covered for 50 mins. Be careful of water if it dries out you can add more water.
Serve with chapati or paratha. Add on bbq chatni or green raita..
