How to make your  Bakra Eid Special

Eid-ul-Adha Recipes are very special because of its traditional and delicious taste, these recipes are very common & most favorite of all the people in Pakistan and the rest of the countries. Eid ul azha is a special religious day of all Muslims because of qurbani and also known as “Bakra Eid”; there are so many recipes that cooked on these days.

You can enjoy bar b q,kababs,Paya,nihari, korma, chapli kebab ,fry kabab in the next days of Eid. First day is a very busy day for Pakistani women because of Qurbani and everybody in the home wants meaty dishes too.I am providing some easy to make recipes for first day of Eid and also some tips to be prepare for Eid day.If you want to make  Seekh kabab on first day ,,put your beef meat in food processor or chopper and follow my recipe of seekh kabab ,,,which has been selected by times of India.com.  Read  here

PREPARATIONS Before Eid ul Adha/Bakra Eid

Make ginger,garlic and raw papaya paste add some oil and freeze it.you can use it whole month easily.

Roast cumin in a flat pan  and grind in coffee grinder.you can use it in most of the traditional Pakistani recipes.

Make garam masala powder.

Roast coriander in a flat pan and grind in coffee grinder.you can use it in most of the traditional Pakistani recipes.

If you want to make biryani on Eid day then prepare biryani masala on a day before Eid,then you will just have to add meat and boil rice.You can make biryani easily.

Ready made spice mixes are also good for a busy day…


Easy Recipes for Bakra Eid/Eid Ul Adha

Eid’s First day, the first recipe is (liver)bakray ki Kaleji & gai kaleji, this recipe is made by using very simple ingredients and very quick to make in just 20 to 30 minutes at home.

How to remove smell from liver.

Before washing liver rub some wheat flour gently.leave it for 20 minutes.then wash and soak it in salted water for 20 minutes and then it is ready to cook.

How to make soft kaleji/liver

Always add salt at end of cooking liver to avoid making it hard..Do not add water let it cook in its own juices on low flame.

Pan fried goat liver/kaleji

Ingredients

Liver 1 kg wash well

Green chillies chopped 6

Garlic chopped 1tbsp

Salt 1/2 tsp

Crushed black pepper 1/4 tsp

Lemon juice 1 tsp

Oil 4 tbsp

Method

Heat oil in a wok and fry garlic till golden .Now add liver and fry well on high flame.Then cover the lid of pan and cook liver for 15 minutes on low flame.When liver is about to tender , add green chillies,salt ,black pepper and lemon juice and stir on high flame and serve.

You can cook the cow liver and kidneys with the same method.



Tawa Mutton roast

It is a very flavourful mutton recipe.You can make it with lamb,or beef. Easy recipe of Boiled meat with just 3 spices black pepper ,cumin and coriander powder.

Serving= 3-4 persons
Ingredients,
mutton or beef with bones 500-550 gm

ginger garlic paste 2 tbsp

tomato skinless 1

green chilies 2

salt 3/4 tsp or as required

Roasted cumin powder 1 tsp

black pepper corns 3/4 tsp

Roasted coriander powder 1 tsp

lemon juice 2 tbsp

fresh coriander for garnish

oil 1/8 cup

Directions,
Step 1:::In a pan add meat, skinless tomato, ginger garlic paste,  green chilies cut in long slices and salt.

Step 2:::now with 1-1/2 cup of water cook it with lid until mutton is nicely tender but meat should not separate from bones.

Step 3::when mutton is cooked, if it has some water dry it on high heat.

Step 4::Then heat 1/8 cup oil on tawa, keep meat on it ,stir it, and slightly brown it both sides of pieces.

Step 5::Add some more oil if you want, and 1 more thing if you are making mutton more that this quantity ,cook it on tawa in 2-3 batches so that will equally brown from each side. Now sprinkle black pepper powder,roasted coriander and cumin powder and sprinkle lemon juice. give it a final stir and turn off the heat, don’t cook it after adding roasted spices because then spices will burn and all flavor will ruin.sprinkle chopped coriander leaves and serve with your favourite chutney, dip or sauce.

Bhuna gosht



It is a quick recipe for making bhuna gosht.you can make it with mutton,lamb or with beef

Pasanda(or parcha) which is thin beef strips.

ingredients
Beef boneless (1,1/2″ cubes) 1 kg
Tomatoes (skinned and chopped) 2 big size
Large green chillies 4
onions 3 medium size
Oil 4 tbsp
Coriander leaves (chopped) 1 bunch
Ginger-garlic paste 2 tbsp
Salt to taste
Cooking Directions
Boil beef with 1 tsp salt, ginger and garlic paste.
When water dries and meat is tender then turn off the flame.
Heat oil in a wok put in Onions and fry till golden then add tomatoes and fry.now add salt 1/2 tsp,red chilli powder 1 tsp,turmeric powder 1/2 tsp,coriander powder 1/2 tsp and cumin powder 1/4 tsp.
Add the beef pieces, fry for another 5-10 minutes on high heat till water from tomatoes dries and a little gravy is left.
Finally add green chillies and coriander leaves and fry for a minute so.
Serve hot.



Spicy mutton chops

ingredients

Mutton or lamb chops 12

garlic paste 1 tablespoon

ginger paste 1 tbsp

cumin powder 1/2 teaspoon

coriander powder 1/2 teaspoon

chaat Masala 1 tsp

Red chilli pwd 1 tbsp

salt 1 n 1/2 tsp

Turmeric powder 1/4 teaspoon

oil 2 tablespoons

Directions.,..

Heat oil in a big pan or wok.Fry mutton chops with ginger n garlic paste from both sides .Now add all the remaining ingredients except chaat masala.then add 1/2 cup of water and cover the lid .cook on low flame for 2 hours.when chops are tender fry well.sprinkle chaat masala and serve.

Spicy beef fry
ingredients

Boneless beef cut in small cubes 750 gms

garlic paste 1 tablespoon

ginger paste 1 tbsp

cumin powder 1/2 teaspoon

coriander powder 1/2 teaspoon

chaat Masala 1 tsp

Red chilli pwd 1 tbsp

salt 1 n 1/2 tsp

Turmeric powder 1/4 teaspoon

oil for deep frying
Method
Boil beef with all the ingredients and 1 cup of water till tender.Do not over boil the beef because it will further cook during deep frying.Heat oil in a wok for deep frying.Fry beef till crispy .Serve hot with ketchup or with your favourite sauce.

Mutton leg steam roast

Ingredients
1 whole mutton or lamb leg
1 cup natural yogurt
4 tbsp papaya paste
2 tbsp ginger paste
2 tbsp garlic paste
1 tsp cumin powder
1/2 tsp hot spice powder
1 tbsp chaat masala
1 tbsp red chili powder
1 /2 tsp turmeric powder
salt 2 tsp
Roasted coriander powder 1 tsp
lemon juice 1 tbsp
Oil for frying 1/4 cup
Directions:
Step by Step Method
Step 1
Wash mutton leg properly then drain. Make deep slits over the leg.

Step 2
Sprinkle salt and lemon juice over it. Apply ginger garlic paste and papaya paste on it.leave it for 30 minutes.
Step 3
Take a large sized pot or deep large skillet. Heat oil in it.fry mutton leg from both sides to give it a brown colour
Step 4
In a bowl, combine all remaining ingredients in yogurt. Apply on fried leg properly.

Step 5
Now pour 2 cups of water in the pot and cover the lid. Cook on low flame for 2 hours or until cooked thorough. Mutton leg Roast is ready to serve.
