Baigan and Methi tarkari

baigan n methi tarkari


 Brinjal 1/2 kg (cut in slices)

Oil 4 tbsp

yogurt 1/2 cup

tomatoes 4 medium size (chopped)

Kasuri meethi 2tbsp

Mustard seed 1tsp

Salt 1 tsp

turmeric powder 1/2 tsp

Crushed red pepper 3 tsp

green chilli 6

Kurry leaves 15

Coriander leaves 2 tbsp (chopped)


Heat oil in a pan and fry mustard seeds and kurree leaves.Then add brinjal and fry well.Then add in turmeric pwd;salt;red pepper;yogurt and tomatoes.Cook on medium flame till the brinjal is just tender and water dries out.Then add green chilli;kasuri  meethi;coriander leaves and simmer for 5 minutes.
