Mini Pancakes for kids lunch box

Yield 12 mini pancakes

Kids like pan cakes and these fluffy mini pan cakes are good for kids lunchbox.You can make these ahead of time and refrigerate.Pancake batter can not be refrigerated but you can refrigerate cooked pan cakes in an air tight box.You can also make 8-9 regular size pancakes with this recipe.

Egg 1
Flour 1 cup
Baking powder  1 tsp
Vanilla essence 1 tsp
Milk 3/4 cup
Oil 2 tbsp
Powdered Sugar 2 tbsp


Take a bowl.Add all the ingredients. Beat well till a smooth mixture is formed…Pour 4 tablespoons of  this mixture on a large greased non stick pan…


cook on low flame..Dust with sifted icing sugar.

Serving suggestions 

  • serve pan cakes with strawberries and whipped cream.


  •  Serve with Nutella chocolate spread…img_8573-1.jpg
  • Serve with maple syrup.
  • Serve with jam or cadburry’s chocolate and caramel spread .

  7. Oh I always mess up my normal sized pancakes…don’t know how these will turn out lol. Never had them with chocolate though. Yours look indeed amazing!

  10. My kids absolutely love pancakes and my 7 year old daughter has recently learnt to cook them on her own which is great for me! I did not think of putting them in lunch boxes before. What a good idea!
