Mutton Yukhni pulao
Ingredients for yukhni::
1 kg Mutton with bones
1 tsp salt
3 glasses of water
coriander seed 3 tbsp
fennel seed 3 tbsp
ginger 2 inch piece ,cut in slices
garlic 5 cloves
1 big onion sliced
Whole garam masala
Ingredients For rice Preparation:-
3 cup good quality rice or seela rice (soaked)
5 green chillies
4 tbsp of yogurt
4tbsp oil/ghee
2 big onions sliced
whole garam masala
2 tbsp ginger garlic paste
2 tsp salt
1/2 tsp red chilli pwd
Method:
For yukhni:
Take a pot and put 1 kg Mutton ;1 tsp salt and 3 glasses of water and cook on medium flame to make yukhni.
Take a piece of cloth and put
coriander seed 3 tbsp
fennel seed 3 tbsp
ginger 2 inch piece ,cut in slices
garlic 5 cloves
1 big onion sliced
Tie the cloth and put in mutton yukhni.
Cook for 30 min till the meat is not fully tender b/c it will more cook with rice. After this strain meat and keep the soup(yukhni) in a bowl.
For rice:-
Soak 3 cup rice
Heat 4tbsp oil or ghee in a big pot .Fry 2 sliced onion till dark brown. Pulao rice colour depends upon browning of onion. Then fry 2 tbsp ginger garlic paste. Now Add
whole garam Masala;meat (strained from yukhni) ;5 green chilli; 4 tbsp yogurt; 2 tsp salt;1/2 tsp red chilli pwd
Fry well then add rice and yukhni(soup).If require add water its level should be enough to cover rice and meat.Cook on high flame .When all water dries out then stir and simmer for 10 minutes.Serve hot.
