Malt cake for Birthday party 

This Malt cake recipe has been provided by Shagufta Ahsan. She made this cake for her son’s birthday party.I had attended the party,the taste was awesome,so I asked her to share the recipe for my blog readers. It is enough for 24 to 36 guests.She made it a day before the event,and kept in freezer.You must Make sure to wrap it in plastic wrap or Aluminum foil and then freeze.

It tastes  best when it is completely chilled, so make it a day before your event,refrigerate after its ready..

She made 2 cake sponges with this recipe and had decorated seperately. If you want to make a big one then make layers of both sponges and decorate by your own choice with maltesers or chocolate curls.
Chocolate Malt Cake –

Serves ::20-25 persons

Chocolate Cake Sponge:

Ingredients

2  and 1/4 cups all-purpose flour sifted
1  and 1/4 cup sugar
3/4 cup unsweetened cocoa powder sifted
1 and 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 cup Chocolate horlicks Or Ovaltine Or Milo or any malted milk powder (NO OTHER POWDER THAN MALTED POWDER. do not use nesquik or complan or pediasure etc .

1 cup vegetable oil
3 large eggs
1 cup sour cream (if you don’t find then use yogurt OR take tetrapack cream and add 1 tbsp lemon juice and let it stand for 5-10 Mins then use)
1 teaspoon vanilla essence

Method for cake sponge::

Preheat oven to 180c. Grease and flour 2 (9-inch) cake pans.

In the bowl, combine sifted flour, sugar, cocoa, baking soda, baking powder, and salt.

In a small bowl, combine milk and malted milk powder, stirring to dissolve. Add milk mixture, oil, and eggs to flour mixture, beating at medium speed until smooth. Add sour cream and vanilla, beating just until combined. Pour batter evenly into prepared pans, and bake for 20 minutes, or until a toothpick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove cakes from pans and let them cool completely on wire racks.

Ingredients for Chocolate Malt Frosting
1 cup butter, softened
1/2 cup unsweetened cocoa powder
3/4 cup heavy whipping cream OR tetra pack cream
1/2 cup malted milk powder
3 cups icing’ sugar (do not add grinded or castor sugar)
4-5 tbsp cream cheese (Any cream cheese)

Method for frosting::

To make the frosting, in a large bowl, beat butter and cocoa powder at medium speed with a mixer until creamy. combine beaten  cream and malted milk powder, Add cream mixture to butter mixture, beating at low speed to combine. Gradually beat in icing sugar and cream cheese until smooth.

Note :Sift icing sugar and malted milk powder.Butter and cream cheese should be at room temperature .Beat chilled cream separately then add in the frosting.You can also use Happy cow triangular pieces of cream cheese.

Make syrup for spraying.

Dissolve 1 tbsp of  Malt powder in 1/4 cup of milk and Spray on cake sponges.

Spread frosting between layers and on top and sides of cake.

I have taken the following chart from mayfair bakery’s list..They suggest two,, 2 lb (8″) cakes are enough for 24 persons..

2 lb. (8″)
8 – 12 servings
3 lb. (9″)
12 – 18 servings
4 lb. (10″) 16 – 24 servings
5 lb. (12″)
20 – 30 servings
6 lb. (12″)
25 – 35 servings
7 lb. (14″)
30 – 40 servings
8 lb. (14″)
35 – 45 servings
