Afghani Chicken Pulao

It is a modified version of kabuli pulao in which I do not use caramelised carrots..If you like to make it sweet then add 2 tbsp of sugar while frying carrots.


Rice 3 cups

Chicken 1 kg

Salt 2 and 1/2 tsp

Oil 1/2 cup

2 medium size onions sliced 

Ginger garlic paste 1 tbsp

Raisins 2 tbsp

Grated or julienne cut carrots 1/2 cup 

Almond and pistachios sliced 2 tbsp

Kabuli pulao spice mix

How to make kabuli pulao spice mix


Black cardamom 2

White Cumin 1 tsp

Cloves 7

Cinnamon 3 sticks of one inch size

Green cardamom 3

Grind all these whole spices and make a fine powder.


1::::Soak 3 cup of good quality rice.
2::::Heat 4 tablespoons oil in a pot and fry carrots ,,then add raisins almonds and pistachios,,,slightly fry …,,take them out of oil and set aside
 3:::Add more 4 tablespoons oil in the same pot..fry 2 big sliced onions  till golden brown Take out half quantity of onions and spread on paper towel.for garnishing…
4::Add  chicken ,…Fry with ginger garlic paste.Add alt and 1 cup of water …cook for 15 minutes.

5::Now add rice and prepared spice mix with some water .water level should be one inch above the rice level.cook on high flame.when all water dries out
:then stir ,cover the lid and simmer for 10 minutes.Serve and garnish with brown onions,raisins ,almonds,pistachios and carrots.
