Matka Mutton Curry
Ingredients
Mutton with bones 1 kg
Coriander leaves, chopped 1 bunch
Oil 1/2 cup
Fried brown onion 2
Tomatoes 6
Green chilies, chopped 6
Roasted crushed coriander seeds 1 tsp
Turmeric 1 tsp
Black pepper, crushed 1 tsp
Red pepper, crushed 1 tbsp
Ginger garlic paste 1 tbsp
Chili powder ½ tbsp
Roasted & crushed cumin ½ tbsp
Ginger, chopped 2 tbsp
Clarified Butter /ghee 2 tbsp
Salt 2 and 1/2 tsp
Method
• In a  clay cooking pot/handi,cook together ½ kg mutton, 2 chopped brown onion, 1 tbsp ginger garlic paste, 1 tsp turmeric and salt to taste. Cook till water relased from meat dries.
• Now add 6 chopped tomatoes, 1 tbsp crushed red pepper, ½ tbsp chili powder and 1 tsp Crushed  coriander , cook over low flame till water of tomatoes dries .
• Add 1/2 cup oil, 1 tsp crushed black pepper and ½ tbsp roasted crushed cumin. Fry well.Now add 2 cups of water and cook on low flame till meat is tender.
• Then add , 1 bunch of chopped coriander leaves, 6 chopped green chilies and 2 tbsp ghee. Simmer till done.
• Lastly serve with naan .
