Beef Bong Pulao
This Beef pulao has been made with beef bong meat or shank meat,which becomes very tender after cooking.It has a nice aroma of mint leaves and whole spices specially of bay leaves and star anise ..Black cumin also makes a good difference in pulao.
Beef yakhni Pulao
Ingredients Of Yakhni Pulao
750 gms beef shank meat with some bones (preferably bong meat)
4 cup rice, washed and soaked basmati
1/2 cup ghee or oil
2 tbsp fennel seeds (sonf)
2 tbsp coriander seeds
1 medium sliced onion, for yakhni
Salt 1 tsp
Ginger garlic paste 2 tablespoon
Whole all spices as required (big and small cardamoms, cloves, cinnamon stick, whole black pepper, cumin seeds)
1bay leaf/ teez patta
Star anise 4
Boil fennel seed and coriander seeds with 1 cup of water and strain it.
Now take a pot and Put all ingredients with meat and cook for 3hour until meat get tender.Also add strained fennel and coriander seed water.
Now take out meat from yakhni nd strain the yakhni. Keep aside
For pulao masala
Mint leaves 2tbsp
Ginger garlic paste 2tbsp
Black pepper 1tsp
Kala zeera /black cumin 1/2tsp
Fennel seed powder 1/2tsp
2 Sliced onions
Green chilli paste 1tbsp
Heat ghee in pot .Fry onion till golden brown and take half of them out of oil .Spread brown onion on paper towel for garnishing.Nicely brown onion improves the colour of pulao… Now add ginger garlic paste and black cumin and cooked meat and fry well ..now add green chilli paste and bhunofy… now add yogurt, fennel powder ,black pepper ,salt and bhunofy.
Add prepared yakhni according to your rice. Bring it to boil ..
Now add soaked rice in it and mix it and cook it till the rice are 3/4 cooked and water is dried add fried onion nd mint . Now put a lid on it and put it on dum for 10-15 minutes on very low flame.
