Pakistani style_Mutton Biryani_Step by step recipe
This mutton biryani is beautifully spiced and has fragrant layers of biryani rice centred with juicy, tender mutton and masalas.
It has no smell of mutton,because it has the fragrance and aroma of green cardamom,bay leaves,mint and ginger garlic paste. Plus completely bhuna biryani masala and tender meat,cooked on low flame.
While preparing this delicacy, it is very important to choose the right rice for biryani. If you will not choose high-quality basmati rice, it will result into the texture and will hamper the taste as well. So, in order to make a mouth-watering Mutton Biryani, use the basmati rice that has long grains. The longer the grain of basmati rice and greater the flavour of the dish will be.
This Biryani recipe indeed includes marination, to cook mutton with masala, to cook rice, layer the biryani and then dum it. Another important thing that makes any biryani recipe
Let us see how to make mutton biryani recipe step by step at home.
(For 6 -8 persons)
Ingredients
For rice
Good quality Basmati rice 5 cups (washed and soaked)
For marination::
Mutton with bones 1 kg
Yogurt 1 cup(beaten)
Ginger paste 2 tbsp
Garlic paste 2 tbsp
Red chili powder 2 tsp
Turmeric powder ½ tsp
Salt 2 tsp
Bullet green chillies 4
Cinnamon 3 sticks
Bay leaf 1
Green cardamon 4
Black pepper 1 tsp
Chopped Coriander leaves 2 tbsp
Grind Bullet green chillies 4,Cinnamon 3 sticks,Bay leaf 1,Green cardamon 4,Black pepper 1 tsp,Chopped Coriander leaves 2 tbsp and 1 cup yogurt. Mix in mutton.
Mix all remaining marination ingredients and Marinate mutton with this mixture for 1 hour.
For masala ::
Clarified butter or oil 5 tbsp
Medium size Onions 6 (sliced)
Medium size tomatoes 4 (chopped)
Cinnamon sticks 3
Green cardamom 4
cumin 1 tsp
Potatoes 4 (cut into cubes)
Cooking Directions
For Masala:
Heat clarified butter in a pot.
Add sliced onion, fry till they are brown.
Then add
Cinnamon sticks 3,Green cardamom 4
and cumin 1 tsp.
Now add tomatoes and cook for some time till the tomatoes are a bit pulpy.
Now add marinated mutton .Cook nicely on low flame till the oil starts to float and meat is tender . Then add potatoes and cook for 10 minutes.
Simmer on low flame till the oil starts to float.
For rice…
Now fill a large pot with four liter water ,add 3 tsp salt. Bring it to a rolling boil.
Add rice to boiling water and cook till 3/4 done.
Strain the rice in a strainer.
Layering:
Now spread a little clarified butter from the mutton gravy in a large pot.
Spread a layer of rice over it. Spread mutton with little gravy over the rice. Top it with another layer of rice. Then another layer of mutton with gravy. Finish with last layer of rice.
For end of layering rice::
Yellow food colour 1/2 tsp
Mint leaves 1/2 cup
Bullet green chillies 4
Garam masala powder 1 tsp
Milk 4 tbsp
Now mix milk and yellow food colour ,pour on top all over the rice. Add green chillies and mint leaves. Sprinkle Garam masala powder. Spread a thick cloth over the mouth of the pan and cover it with a tight lid.
Heat a griddle pan and place the pot over it.
Steam the biryani over very low heat for 15 minutes.
Serve hot with raita.

This recipe couldn’t have come at a better time. Was looking for mutton biryani recipes.
A quick question though, what size cups did you use for rice? US size 5 measuring cups? Because for pakistani mugs, 5 sounds a lot with 1 kg meat…. Help plz… Thinking of making it today if possible

5 Standard measuring cups that we use for baking are equal to 1 kg uncooked rice.
