Khoobani ki chutney/Apricot chutney

Ingredients

Dried apricots / Sukhi khoobani  1 cup (washed and soaked in 1 cup of water)

 

Sugar 1 cup

Salt 1/4 tsp

1 tbsp white vinegar

Raisins 1/4 cup ( cleaned and washed)

Red chilli powder 1/2 tsp

Method;

Put dried apricots into a sauce pan with the same water in which it was soaked.

Add sugar,salt and red chilli powder. Stir well. Bring slowly to the boil, then reduce the heat and simmer until the plums are tender.Boil the chutney for 20-30 mins, uncovered, stirring occasionally to prevent it catching on the bottom, until it is thick and pulpy. Add 1 tbsp white vinegar and 1/4 cup raisins.  Stir well and turn off the flame. Let it cool.

Pot into sterilised jar.
